1. Prep the Chicken
If using a whole chicken, spatchcock it for even cooking. Otherwise, use 4–6 bone-in, skin-on chicken thighs.
Rub chicken generously with olive oil and Smokey Joe’s Herb Garden Rub. Add cracked pepper, salt, and a squeeze of fresh lemon juice. Let marinate for 30 minutes if time allows.
2. Prep the Veggies
Chop baby potatoes in half, leave Dutch carrots whole (or slice thick carrots into batons), and roughly chop zucchini and onions. Toss with olive oil, garlic, salt, and any leftover herbs or spice rub.
3. Assemble & Roast
Preheat oven to 200°C (fan-forced).
Arrange vegetables on a lined baking tray, place the chicken pieces on top. Add a few lemon wedges and a handful of rosemary sprigs if you have them.
