  • Dutch carrots, beetroot, parsnips, sweet potato

  • Soft goat cheese

  • Fresh rocket or baby spinach

  • Walnuts or pepitas

  • Olive oil, red wine vinegar, Dijon mustard

Method:

  1. Roast chopped root veggies in olive oil, salt, and pepper at 200°C until caramelised.

  2. Toss with fresh greens, crumbled goat cheese, and toasted nuts.

  3. Drizzle with a vinaigrette made from red wine vinegar, Dijon, and olive oil.

Perfect as a side or a standalone lunch.


2. Warm Kale, Quinoa & Feta Salad

Ingredients:

  • Tuscan kale (or cavolo nero)

  • Cooked quinoa

  • Cherry tomatoes

  • Feta or marinated Persian feta

  • Lemon, garlic, extra virgin olive oil

Method:

  1. Sauté chopped kale in olive oil and garlic until slightly wilted.

  2. Toss with warm quinoa, halved tomatoes, and crumbled feta.

  3. Dress with lemon juice and olive oil for a fresh finish.

3. Grilled Broccolini & Halloumi Salad with Citrus Dressing

Ingredients:

  • Fresh broccolini

  • Halloumi cheese

  • Orange or mandarin

  • Mint leaves

  • White balsamic vinegar, honey, olive oil

Method:

  1. Char-grill broccolini and slices of halloumi until golden.

  2. Arrange on a plate with orange segments and mint.

  3. Whisk a dressing from white balsamic, honey, citrus juice and olive oil.
